Latin Name: Thymus vulgaris

A hardy perennial that grows into a very aromatic low growing plant covered in tiny grey-green leaves and in June, delicate mauve-pink flowers. The leaves may be used to flavour stews, stuffings, sausages and vegetables. It combines very well with marjoram and rosemary and is an essential ingredient of bouquet garni. Thyme tea with honey is soothing for coughs and sore throats.

Directions
Sow outside from March to May in a very finely prepared shallow drill. Lightly cover with finely sieved soil and keep watered. Transplant when large enough. Prefers any light, well drained soil. Harvest the leaves just before flowering if drying. Otherwise at any time.
